We work with two amazing farms in Guatemala. Each has its own varietals and flavor complexities.
Finca Rosario Quezada
Located in Coatepeque, Quetzaltenango
Finca Rosario Quezada produces specialty cacao from a diverse blend of local varieties from Guatemala’s Pacific Coast, with a focus on preserving genetic diversity while developing its productive and sensory potential.
The cacao is grown within an agricultural system designed to maintain a balance between production and the conservation of the farm’s ecosystems. The genetic diversity found throughout the plantation contributes to complex and versatile cacao profiles.
The finca operates its own post-harvest facilities, where controlled and traceable fermentation and drying protocols are implemented. Careful management of these variables helps optimize bean quality and achieve a consistent expression of the cacao’s sensory characteristics.
Finca Ana María / Tuulux
Located in Lechúa, Cobán.
Finca Ana María specializes in developing specialty cacao from local genetics, with particular emphasis on the selection and preservation of Criollo cacao and hybrid varieties with Criollo ancestry.
Its production system integrates genetic selection, agronomic management, and conservation of the natural ecosystems surrounding the growing areas. The finca has also developed specific fermentation and drying protocols designed to achieve a clean and well-defined expression of the sensory characteristics of each genetic selection.
Among its most distinctive cacao is Tuulux, a selection of 100% white beans, characterized by its delicacy, creaminess, and low perceived bitterness.
Our whole cacao beans are imported directly from our farm in Guatemala and are already stocked in Tennessee, making it easier for U.S. businesses to purchase premium cacao without managing international importing.
By managing our own sourcing, importing, packing, and distribution, Cacao Senses is able to offer direct access to our cacao with dependable U.S. inventory and competitive wholesale pricing.
